Venison Wellington with my own catch after joining Matt @grovegamelarder for the day 🥩 Wild Venison is super tasty and probably the most ethical meat you can eat - they’re naturally overpopulated and the government actively encourages culling - but doesn’t fund it, so we rely on people like Matt to keep their populations down. Only about half of the amount of deer are culled that should be each year so fine your local deer management specialist and support them by buying some meat, it’s super tasty and extremely lean and high in protein! I recommend the tenderloin as your first try as an entry level piece of meat as it’s the least “gamey” and then work your way up to the leg, ribs and shoulder etc! #wellington #britishfood #venison #wildmeat #farming #comfortfood #scran

How do you make Porchetta even better? Make a Porchetta Wellington, obviously 😋 De-skin a pork belly, roll it up with a herby compound butter, smoke at 140C for 3 hours then let rest with the excess fat before wrapping in mushroom duxelle, prosciutto and the ESSENTIAL crepes then double side egg washed puff pastry As per @jortskitchen sous vide that pork skin at 72C for 12-24 hours, scrape the excess fat off, slice it into a lattice, lay atop an egg washed wellington and bake at 220C for 30-35 minutes. Lay on a rack over a deep tray and immediately pour over 200C oil to puff up the crust! Slice a piece, serve it up and enjoy (with gravy 😋) #porchetta #wellington #italianfood #britishfood #crackling #porkbelly #comfortfood #scran

The London Marathon you absolute beauty ❤️ Congrats to every single person who crossed that finish line, marathons are bloody hard and you should be so proud of yourself 👏 What a special day that I am SO grateful to be a part of. The atmosphere in London was electric, genuinely can’t see how it could have been any better (other than cooler temperatures to make the running easier 😂) If you cheered me on during the marathon, you have my deepest gratitude, cause after about 20km, I needed it more than you know 🫡👏 Was a hot day so naturally a very tough one. Missed my ideal target of 2:45 but still came in with a sturdy PB of 2:52:39 which I’m proper chuffed with, as this training block certainly had its hiccups, from a concussion and cracked rib on a ski trip 3 months out to pulling my right hip flexor and having a dodgy left knee 1 month out(I’m a plonker for going for 3 back to back half marathon PB’s 3 weekends in a row 😂), so I have both @runna for the plan and race weekend vibes and @pumarunning for the swanky new Fast R3’s to help me pull this 7 minute PB out the bag 👊 Giving my legs a bit of a rest now, ready to come back with some more antics soon, keep your eyes peeled 👀😁 #londonmarathon #tcslondonmarathon #dayinthelife #jogging #Running #marathon #scran

Trick to the perfectly seasoned and juicy British Brisket? Soy brine and velvetise it with Kikkoman 😋 AD Just add 300ml Soy sauce and 1 tsp bicarb to a 5kg Brisket and leave for 2-4 hours for the meat to soak up the soy sauce by osmosis (sometimes called velveting) making it super tender Then smoking it at 140C uncovered for around 8 hours or until it hits around 75C internal (doesn’t need to be precise) before wrapping up and cooking at 160C for around 3 hours or until the internal temp has hit 95C for 30 minutes then put it in a warm spot to let rest for 2+ hours then slicing into juicy and tender brisket pieces! To make a brioche dough, take out the salt from your favourite brioche recipe and add 100ml teriyaki marinade and 100g strong bread flour per 1kg dough And add 2 tsp soy sauce to your favourite brownie recipe for a salty umami kick 😋 #brisket #sandwich #soysauce #kikkoman #brownie #bbq #texas #comfortfood #scran
